BREAKFAST MACARONI & CHEESE

INGREDIENTS

2 cups leftover macaroni & cheese

4 slices of bacon, chopped

1/2 cup frozen peas, thawed

2-4 eggs

2 tbsp milk

chopped chives or scallions for garnish (optional)

DIRECTIONS

Reheat macaroni & cheese with milk either in the microwave covered with a wet paper towel, in 1 minute increments or on the stovetop in a covered saucepan on low heat, stirring occasionally.

Meanwhile, in a frying pan, heat bacon over medium heat until desired crispness. Remove bacon to drain on a paper towel. Add a tablespoon of the bacon grease into the macaroni & cheese. Keep another tablespoon or 2 in the frying pan (discard any extra grease).

Cook eggs to your liking (sunny side up, over easy, or scrambled) in the remaining bacon grease in the frying pan.

Once macaroni is reheated, add in peas and bacon, stirring to warm through. Top with eggs, garnish with chives or scallion, and serve.
