MEATBALL PARCELS/FOIL PACKS




Foil packs are a camping staple. Simple to throw together and easy to clean up. You can use homemade meatballs and sauce but the pre-made, frozen variety works well here. I pack all the frozen ingredients into a zip top bag and store in the freezer. No need to thaw! It will cook just fine from frozen. When it's time to prepare dinner, add the cheese cubes and BBQ sauce directly into the bag and give it a shake. The bag does double duty for storage and prep work. It can even store the leftovers, if there is any, so don't toss it out right away. 


Serves 4

INGREDIENTS

1 lb frozen meatballs (I used turkey meatballs) 

1 lb frozen potato tots (about half a package)

10-12 oz frozen veg of choice (1 ½ -2 cups, I used mixed veg)

4 oz cheese (any flavor, cut into cubes, I have Cheddar and Monterey Jack)

1-1 ½ cups favorite BBQ sauce (½ of a bottle)


DIRECTIONS


Preheat and prep grill, then set to low. 


No need to thaw frozen ingredients. Mix everything together until nicely coated with BBQ sauce. Spoon onto lightly greased or parchment-lined heavy duty (or double up sheets) foil, approximately 18 inches long. Pull up the shorter ends so they meet in the middle, above the food, and roll them gently down and crimp. Then roll the open ends closed and crimp.


Place over low flame and cook 40 minutes, rotating foil parcels every 10 minutes. Sprinkle with herbs before serving if desired, or not :)
