GRAVY TRAIN


Otherwise known as "Hamburger Gravy," this was served over mashed potatoes as a staple in my childhood home. My Mom and Grandma usually made the gravy starting with an envelope and the potatoes from a box. Around the family table at a current dinnertime, I mentioned this meal to my kids and they immediately requested it be put on the meal plan. So here is a piece of nostalgia from my childhood. I hope your family enjoys it as much as mine did :)   


Serves 4
INGREDIENTS
1lb ground beef (85% lean), crumbled and broken up from its block
1 tbsp oil
1 onion, diced
1 garlic clove, minced
1 tsp ground coriander
1 tsp ground mustard
1 tsp dried dill
1 tsp dried parsley
1 tsp salt
½ tsp pepper
1 tbsp soy sauce or liquid aminos
3 cups beef broth
¼ cup cornstarch
½ cup broth or water


DIRECTIONS
Heat oil over medium-high flame and scatter beef in an even layer. Season with salt and pepper. Do not stir beef until the bottom layer has crisped and browned.. Rotate the pan over the flame instead. When the beef is caramelized, flip over the crumbles and let them color on the opposite side. Stir in the onions and cook until softened. Add in the garlic, spices, and herbs and cook until fragrant, 1 min. Pour in the soy sauce and broth. Bring to a boil, then reduce the heat to a simmer and cook for 20 minutes. 

After 20 minutes, the sauce will have reduced slightly. Mix the cornstarch with the water or broth and add it into the gravy, a little at a time, until the desired consistency is reached. Taste for seasoning. Serve over mashed potatoes (preferably), noodles, or rice.
