I'm posting this as a camp meal but, truthfully, it can be made at home for dinner too. It's definitely not your traditional chicken parm. This is my quick and easy, campground-style chicken parmesan. Serve alongside a grilled veggie or Cesar salad.
Serves 2-4
INGREDIENTS
2 lbs boneless skinless chicken breast
8 oz pasta of choice
1 ½ cups spaghetti sauce (or about ½ a jar)
½ cup mozzarella cheese
1 tsp Italian seasoning
Salt & Pepper
Oil
DIRECTIONS
Prepare your grill. Boil water for pasta. Season chicken with oil, Italian seasoning, and salt & pepper.
Once grill is warmed, Cook chicken on medium-low flame for about 10 minutes.
Meanwhile, cook the pasta to your desired doneness.
After 10 minutes on one side, flip the chicken over and cook for 5 more minutes. Spread about a tablespoon of sauce on each chicken breast. Sprinkle the cheese over top. Close the lid, let the cheese melt, and remove the chicken when the internal temperature of the chicken read 165º. Set aside to rest.
Drain the pasta, mix with the remaining spaghetti sauce, and serve.
