This salad is light and refreshing. It can be a lovely side dish paired with chicken, or a nice lunch with some chickpeas and pasta added in. If I had a garden, I'd grow all these ingredients! Except the cheese :)
INGREDIENTS
16 oz grape tomatoes, cut in half
14 oz mini cucumbers, quartered and sliced
1/4 sweet onion, diced
1/4 cup fresh mint, chopped
6 oz feta cheese, crumbled
1 lemon, juiced
1 1/2 tsp salt
1/4 tsp pepper
DIRECTIONS
Mix all ingredients together in a large serving bowl.
Taste for seasoning and serve.
TIPS
For best flavor, make sure to start with cold produce or stash in the refrigerator for an hour to chill.
