Here is an easy marinara sauce made with canned tomatoes. San Marzano tomatoes are the best quality but any can of whole peeled tomatoes will work. Put pasta water to boil before you start cooking. Drop pasta in while sauce simmers and you'll have dinner in no time! Serves 4-6
INGREDIENTS
28 oz can San Marzano tomatoes
1 medium onion, diced
4 cloves garlic, minced
1 Tbsp olive oil
1/4 cup fresh basil, chopped
1 tsp salt
1/2 tsp pepper
DIRECTIONS
Heat oil in a deep skillet or Dutch oven over medium heat. Add onions and saute until translucent. Stir in the garlic and cook for about 30 seconds then pour in the can of tomatoes with all the juice. Reduce heat to low and simmer for 10 minutes.
Once the tomatoes start to break down, press the mixture with the back of a spoon or potato masher to break up large pieces. For a smoother sauce, puree mixture with an immersion blender or in a food processor.
Sprinkle in basil, salt, and pepper. Taste for seasoning and serve.
