JAPANESE FRUIT SANDO

 


I was challenged by a friend to make a vegetable pizza. I took the challenge and spun it 180º in the opposite direction. This Japanese fruit sandwich is not my invention at all but I am so proud of the way my very first attempt turned out I need to share it  \(^0^)/  Woo Hoo! It's not hard to do at all. Just a little thought into the layout of the fruit. Even if it doesn't turn out, it's still delicious!


JAPANESE FRUIT SANDO
Makes 4 sandwiches

CREAM CHEESE WHIPPED CREAM
1 cup heavy cream (kept very cold)
½ cup confectioners sugar
1 tsp vanilla 
4 oz cream cheese (softened and whipped)
Beat cream, sugar, and vanilla to stiff peaks then stir in the whipped cream cheese. Cover and refrigerate until ready to use.

FRUIT SANDWICH
1 clementine, peeled
2 strawberries, cut into a tulip or crown shape
2 kiwi, peeled and cut into 4 slices lengthwise
1 peach, cut into quarters and stone removed
4-6 grapes, whole
8 slices sandwich bread, white or Hawaiian

DIRECTIONS
Smooth whipped cream over 1 slice of bread. Lay the flower fruit down first (orange), diagonally across the bread, thinking about which way the knife will slice it. (The orange shall be laid out so the segments are horizontal in relation to the cut line.Strawberry shall lay vertically on its side.) Then lay either a grape or the arched section of the kiwi in the opposite corner of the cut line, followed by a layer of cream, then the thicker, inner part of the kiwi will become the “stem,” another layer of cream, repeat another grape or arched kiwi, and finally a last layer of cream to cover the fruit. Top with a second piece of bread and wrap tightly in plastic wrap. Mark a line on the plastic indicating where to slice. Store in the refrigerator for at least an hour. Repeat for remaining sandwiches.

Once the sandwiches have firmed up, remove the plastic, trim off the crusts, and slice open with a sharp knife.
